The progressive Process Scientist job itself where you will be challenged to undestand & leverage information & insight as you pursue perfection in prawns, ensuring continuous improvement in respect to products process and ultimately quality & quantity yield.

More specifically: Understanding the physical and biological influences, the structure of the protein inside the prawns. Yield can be 11 – 12% or 20-21% so why is there such variation? What are the characteristics of the protein, looking at the heating up of the prawn to understand where parts break down and where energy is released? Looking at the footprint of the prawn, design coolers so that the best can be got out of the prawn. Is fast cooking more efficient? Mapping out how the water flows into the cooker – thermodynamics. Does the process need redesigning? What adds succulence to prawns? If  prawns are under stress when killed, does that make prawns more or less succulent? Does humidity or temperature affect it as well? How can the process be controlled so that the science behind it all can be figured out? This role is very much a mixture of the day to day a well as the forward thinking. Run trials and do experiments in the labs.  Taking all of this information and making it into practical guides so that the retailers can engage with the insight.
